"Savigny is one of the largest Producers of wine in the Cote de Beaune, luckily we have several great producers and in the context of Burgundy, wines of real value; Even the best 1er Crus cost less than many Chambolle or vosne romanee, and don't worry about longevity, several of the 1er Crus will easily age for more than 15 years he's Robert Parker perfectly correct (and in the same company as Allen Meadows and Clive Coates) when he talks of the almost unmatched price to quality wines." - Burgundy Report
And one of the top producers of wines from Savigny-les-Beaune is Domaine Jean-Marc Pavelot. The Pavelot family name is woven into the history of the village. Their name is found in the public registry as landholders dating back to the 17th century and is found on the street signs and a few of the public buildings. At present, it is the brother/sister team of Luc and Lise Pavelot who manage the 8.6 hectare domaine. Both graduated from Beaune's renowned winemaking school, both gained experience in regions outside of their home, Luc in northern California at Navarro vineyards and Lise in the Loire Valley at Domaine Dagueneau, before returning home and taking over from their father Regis, in the early 1990s.
