DOMAINE JEAN-MARC & HUGUES PAVELOT
For several generations, Domaine Jean-Marc and Hugues Pavelot located in Savigny-les-Beaune is transmitted from father to son, guaranteeing the know-how that makes its reputation. Today, the property covers 13 hectares, mainly in the municipality of Savigny-les-Beaune but also in Beaune and Aloxe-Corton. Their production will allow you to discover a dozen wines with a very varied typicity. These differences are closely linked to the notion of terroir, a particularity of Burgundy viticulture.
Each name or climate is therefore the expression of a rather complex association between the geology of the place, its topography and even its history. The fruit quality of the Pavelot wines are superb, but these are not simple and forward by any means. There is a solid structure behind each of these wines, quite tannic in some of the Savigny cuvees, which safeguards their ageing potential.
